how much do I have to have in assets or income to qualify? as I wont need to work in Italy. Thank you,

With regard to financial assets, you need to demonstrate "documented and detailed guarantee of substantial and steady economic resources deriving from private income (pensions or annuities), properties, stable economic and commercial activities or other sources." rather or not the evidence you provide meets that criteria is at the discretion of the immigration authorities.
